Hickory Baked Pork Chops with Fettuccine



(Makes 8 servings)

You need:
1 small can (16 oz) stewed tomatoes
1 onion, thinly sliced
2 cloves garlic, minced
2 tsp sugar
2 tsp oregano
1 can (16 oz) tomato sauce
4 Tbsp hickory smoke-flavored BBQ sauce
8 center-cut loin pork chops
1 package (16 oz) fettuccine (whole grain if desired)
Chopped fresh parsley for garnish

In a casserole dish, stir together stewed tomatoes and their liquid, onion, garlic, sugar, oregano, tomato sauce, and BBQ sauce. Add pork chops, spooning half of the mixture over them. Cover and bake in a 350* oven until pork near bone is slightly pink(cut to test). It's about 1 hour.


When chops are almost done, cook fettuccine according to package directions.


Use parsley when serving. Enjoy!
